Don't be fooled by the newer pansThe 13" long by 4" high by 4" wide is slated as a 1.5 pound of dough type of pan, but I use more dough to have a bit of a firmer texture final loaf that does not resemble store bought loaves. I am happy to provide tips and a formula that makes the right amount of dough for this pan. This type of loaf is great for sandwiches, but is often used in hotels/catering-crust removed, sliced lengthwise for efficient canape/finger sandwich/hors d' oeuvre preparation.
